I seem to have narrowed it down: when I eat bread, I have annoying mood swings. (There may also be a tenuous exercise connection, wherein when I knock myself out aerobically at the gym, I then have mood swings that annoy everyone around me.)

This could really put a dent in traditional methods of disposing of leftover turkey. Bummer.

I think it's actually the yeast. There may be cupcake experiments this weekend.

I seem to do okay with flour tortillas. More experimentation with those or pitas might be called for.

[I still haven't done the tea-off, by the way. So I probably shouldn't hold my breath on the wheat experiments, should I?]

if it's the yeast, maybe proper sourdough would be ok? (i'm reaching, i know, but it's my nature.)

Experiments are happening. Logs are being kept. Proper sourdough may be quite hard to find this far from civilisation. I shall consider this option though.

SF is like The Land Of Sourdough... i can't imagine none of it makes it down that far.

up here, it's a pain in the ass to find anything but sourdough.

By the way, if you think it is the yeast, try coming up with a quick bread recipe that is leavened using baking soda. Alternatively, go the Pesach route and have turkey on matzah.
