Does anyone know if bread is one of those things like milk, where if you stop eating it for long enough you lose the ability to digest it properly?

and if so... is it likely to be the yeast, or the gluten, or what?

I am coming from complete ignorance on this topic, so please go easy on me if that was an incredibly stupid question.

Update - I heard from an actual expert (WOAF) that many serious gluten issues are caused by antibodies developing for whatever reason. So it's not a shortage of good stuff, but an excess of bad stuff that causes the trouble.

I was also informed that gluten issues would be causing, how can I put this delicately... much more OBVIOUS GI issues than what I'm experiencing. (-: So, lucky me, that's not my problem. (Still don't know what the problem actually *is*, but there's that process of elimination thing again.)
